Zucchini and Peas
Zucchini is one of my favorite vegetables. You can cook it in so many ways, from the lightest to the richest: zucchini gratin, stuffed zucchini, steamed with a little olive oil, as spaghetti, in a flan, or in soup…
Today I am sharing with you a recipe made with zucchini and peas. On its own, this recipe can even be a main course, especially if you serve it with a starchy side dish. Ready in just a few minutes and full of flavor, it is a great way to eat plenty of vegetables while still treating yourself.
Ingredients
– 2 to 3 fresh zucchini depending on their size
– Fresh or frozen peas
– Shallot
– 3 thin slices of cured or cooked ham
– 1 tablespoon olive oil
– Turmeric
– Salt, pepper
Preparation
In a saucepan, gently sauté your shallot cut into small pieces in one tablespoon of olive oil, then add a few strips of cured or cooked ham (without the fat).
Cut your zucchini into pieces and add them to the shallot-and-ham mixture. Finish with the peas. Season with salt, pepper, and turmeric, then let everything simmer until the zucchini and peas are cooked through. You can enjoy this zucchini and peas recipe either hot or cold depending on what you are in the mood for!
