Still in the spirit of squash-based recipes, today I am sharing this pumpkin tart with caramelized onions. It is easy to make and absolutely delicious. It is a nice change from quiches and a good way to eat vegetables — even if the pumpkin is transformed quite a bit in this recipe.

It is truly a winter dish and can even be prepared for Halloween, for example. It is also a rich dish, so it is best enjoyed with a salad.

Ingredients

– 1 sheet homemade puff pastry or additive-free puff pastry if possible

– 1/2 squash (today I am using butternut squash)

– 1 red onion

– 2 eggs

– 25 cl thick cream (or another alternative if you do not eat dairy)

– 1 bowl bacon lardons

– 1 tablespoon oil of your choice

– 1 tablespoon balsamic vinegar

– 1 teaspoon brown sugar

– Salt and pepper

Method

Start by preparing your squash. I explain how to do that in my recipe for pasta with butternut squash sauce.

Once the squash is cooked and mashed into a purée, set it aside. Crack the eggs and separate the whites from the yolks. Beat the yolks in a bowl, then add the cream while continuing to mix. Stir in the squash purée.

Beat the egg whites until stiff peaks form, then gently fold them into the squash and egg mixture. Once everything is well combined, season with salt and pepper to taste.

In a frying pan, cook the bacon lardons for a few minutes, then place them on paper towel.

Peel and slice the onion, then cook it in 1 tablespoon of oil. When it starts to color, sprinkle it with the brown sugar and then add the balsamic vinegar. Cook over high heat for 1 minute, then let it simmer over low heat for about 10 minutes.

Roll out the puff pastry in a tart pan and prick it lightly with a fork. Arrange all the cooked bacon lardons and half of the caramelized onions over the pastry, then cover with the squash purée mixture.

Bake in a preheated oven at 200°C / 390°F for about 30 minutes. When the pumpkin tart is cooked, remove it from the oven and scatter the remaining caramelized onions on top.

What can I say except that the whole tart was eaten in a single meal… Give it a try — you will love it.
