Charlotte aux poires et au chocolat

My husband loves pear and chocolate charlotte. Here is a simple and effective recipe with a 100% guaranteed result.

 

INGREDIENTS FOR PEAR AND CHOCOLATE CHARLOTTE

For the chocolate mousse

– 200 g dark baking chocolate

– 6 eggs

For the poached pears

– 2 to 3 pears depending on their size

– 100 g sugar

– 1 liter of water

For the charlotte

– Ladyfingers or sponge fingers

 

Start by making a syrup with the water and sugar in a saucepan over medium heat. Once it comes to a boil, poach the pears for about 15 minutes after peeling them first. Then remove them from the syrup and let them cool.

For the chocolate mousse, melt the chocolate, then mix it with the egg yolks. Beat the egg whites until stiff, then gently fold them into the chocolate with a wooden spatula. Next, cut your pears and mix them into the chocolate mousse. Refrigerate it for 1 to 2 hours.


When your mousse is ready, dip the ladyfingers or sponge fingers into the pear syrup and line your mold with them. Then alternate a layer of chocolate mousse and a layer of biscuits, finishing with the biscuits. Chill again for at least 3 hours, then unmold your charlotte and decorate it however you like!

That day, I simply decorated my pear and chocolate charlotte with grated dark chocolate.
