Happy Easter
Today, I prepared this dessert to celebrate Easter with the family: a genoise cake with mascarpone whipped cream and strawberries.
Ingredients
Genoise
– 125 g flour
– 125 g sugar
– 4 eggs
– 1/2 packet baking powder
Mascarpone whipped cream
Full-fat liquid cream
Icing sugar

Preparing the genoise
For the easy and quick genoise recipe, start by preheating your oven to 180°C. Mix the flour with the baking powder. Separate the egg whites from the yolks, then beat the egg whites until stiff. When they are very firm, add the sugar little by little while continuing to beat. Then add the yolks one by one, followed by the flour-and-baking-powder mixture. Pour into your previously buttered pan and bake for 20 minutes.
Let your genoise cool slightly, then unmold it. For today’s cake, I prepared 2 genoise cakes.

Assembling the cake
Cut your strawberries into small pieces, then add them to your whipped cream. Slice your genoise cakes in half widthwise and fill them with your mixture. Then decorate your cake! It will keep perfectly in the refrigerator!
