Rainbow Cupcakes
Rainbow cupcakes are hugely popular. And it is easy to see why: they make us dream with their rainbow colors! I gave them a try, and here is the result and of course the recipe.
For about a dozen rainbow cupcakes you will need:
– 3 eggs
– 170 g butter
– 170 g sugar
– 275 g flour
– 1 vanilla bean (or vanilla extract)
For the frosting (I chose a mascarpone whipped cream)
– Mascarpone
– Full-fat liquid cream
– Icing sugar
Preparing the cakes
Start by mixing the softened butter and the sugar until you get a creamy mixture. Then add the eggs while continuing to mix. Next, gradually incorporate the flour to avoid lumps. Then divide the smooth batter equally into several bowls. Add a different food coloring to each bowl to obtain several colors. For the ones in the photos, I chose: blue, purple, pink, yellow, and green.
Bake your rainbow cupcakes for about 15 minutes in a preheated oven at 200°C. Then take them out of the oven and let them cool!
Preparing the topping
I cannot give you the exact quantities because I make the whipped cream by eye and by taste. Put the mascarpone into a bowl (for this recipe, 200 to 250 g is enough) and loosen it. Then add the full-fat cream and the icing sugar until you get a lovely lightly sweetened whipped cream.
Put your whipped cream into a piping bag and decorate your cooled cupcakes.
