Feuilletés courgettes mozzarella

 

Back from Italy to our plates with zucchini and mozzarella puff pastries! Since I live in the Mediterranean region, herbs de Provence and olive oil are part of my daily cooking routine.

You will need the following ingredients:

– 1 sheet of puff pastry (I admit I buy it ready-made)

– 2 zucchinis (when the season allows it, zucchini flowers are even better!)

– 1 ball of mozzarella

– a pinch of garlic powder

– Pepper and salt

– Herbs de Provence

Olive oil

First, cut the zucchinis into small cubes. Cook them in a pan with olive oil until they become soft. Cut small squares in the pastry, add one spoonful of zucchini to each, a little mozzarella (also cut into cubes), then season with the garlic, pepper, and herbs de Provence. Close the squares and bake your zucchini mozzarella puff pastries for 20 minutes at about 190°C (gas mark 6-7). Serve with an arugula salad drizzled with a little olive oil, salt, and pepper.
