Even if, like me, you did not grow up with this dessert, you may quickly fall in love with its unique flavors. Here is my version: simple, accessible, and full of character, perfect for impressing guests or simply treating yourself at home.

INGREDIENTS

For the pastry:
– 250 g flour
– 1 pinch of salt
– 125 g cold butter, cut into cubes
– 60 ml very cold water

For the filling:
– 1 can (420 g) pumpkin purée
– 3 eggs
– 60 ml milk
– 250 g brown sugar
– 15 g cornstarch
– 1 pinch of salt
– 1 ½ tsp cinnamon
– ½ tsp ginger
– ¼ tsp nutmeg
– 240 ml heavy cream, whipped

PREPARATION

In a large bowl, mix the flour with the salt. Add the cubed butter and work the mixture with your fingertips until you obtain a sandy texture. Gradually pour in the very cold water, mix first with a wooden spoon, then finish by hand to form a ball. Wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.

Preheat the oven to 220°C and butter a pan about 23 cm in diameter and 5 cm deep. Roll out the dough and place it in the pan. Cover with parchment paper, add pie weights or dried beans, and bake for 10 minutes. Remove the weights and paper, then return to the oven for 5 more minutes. Set aside.

Reduce the oven to 190°C. In a large bowl, mix the pumpkin purée, eggs, and brown sugar. Add the cornstarch, salt, and spices. Fold in the whipped cream and the milk, then mix well. Pour the filling into the pre-baked crust and bake for about 35 minutes. Let it cool completely before serving.
