Candlemas
Candlemas is celebrated on February 2! Today, Candlemas is more closely associated with crepes than with candles (a religious celebration during which candles were lit…). For the occasion, I am going to give you 2 crepe recipes!
1st recipe: Viennese crepes
Ingredients
– 125 g flour
– 2 tablespoons sugar
– 1 pinch of salt
– 4 eggs
– 50 cl milk
– 45 g clarified unsalted butter, melted and lukewarm
In a bowl, mix the flour, sugar, and salt. In another bowl, lightly beat the eggs with a whisk. Pour in the milk and mix well. Still using the whisk, incorporate the dry ingredients and then the clarified butter. The batter should have the consistency of thick cream. Strain the batter through a sieve over a clean bowl. Cover with plastic wrap so that it touches the surface of the batter. Refrigerate for 1 hour. Take the batter out and wait until it reaches room temperature before using it! Cook in a very hot pan brushed with a little oil and enjoy!
2nd recipe: Brown butter crepe batter
Ingredients
– 250 g flour
– 500 ml semi-skimmed milk
– 4 eggs
– 40 g butter
– 20 g sugar
– a little peanut oil
– a pinch of salt
Cook the butter for 1 minute over high heat until it turns a light brown color. In a bowl, put the flour, sugar, and pinch of salt, then make a well. Add the eggs, mix gently, then add the milk. Finish with the butter. Let the batter rest for a good 2 hours. Cook for 2 minutes on each side in a very hot pan brushed with oil, then enjoy.
