Here is my version: simple, accessible, and full of character, perfect for impressing guests or simply treating yourself at home.<\/p>\n<h2 style=\"text-align: center;\"><strong>INGREDIENTS<\/strong><\/h2>\n<p style=\"text-align: center;\"><strong>For the pastry:<\/strong><br \/>\n&#8211; 250 g flour<br \/>\n&#8211; 1 pinch of salt<br \/>\n&#8211; 125 g cold butter, cut into cubes<br \/>\n&#8211; 60 ml very cold water<\/p>\n<p style=\"text-align: center;\"><strong>For the filling:<\/strong><br \/>\n&#8211; 1 can (420 g) pumpkin pur\u00e9e<br \/>\n&#8211; 3 eggs<br \/>\n&#8211; 60 ml milk<br \/>\n&#8211; 250 g brown sugar<br \/>\n&#8211; 15 g cornstarch<br \/>\n&#8211; 1 pinch of salt<br \/>\n&#8211; 1 \u00bd tsp cinnamon<br \/>\n&#8211; \u00bd tsp ginger<br \/>\n&#8211; \u00bc tsp nutmeg<br \/>\n&#8211; 240 ml heavy cream, whipped<\/p>\n<h2 style=\"text-align: center;\"><strong>PREPARATION<\/strong><\/h2>\n<p>In a large bowl, mix the flour with the salt. Add the cubed butter and work the mixture with your fingertips until you obtain a sandy texture. Gradually pour in the very cold water, mix first with a wooden spoon, then finish by hand to form a ball. Wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.<\/p>\n<p>Preheat the oven to 220\u00b0C and butter a pan about 23 cm in diameter and 5 cm deep. Roll out the dough and place it in the pan. Cover with parchment paper, add pie weights or dried beans, and bake for 10 minutes. Remove the weights and paper, then return to the oven for 5 more minutes. Set aside.<\/p>\n<p>Reduce the oven to 190\u00b0C. In a large bowl, mix the pumpkin pur\u00e9e, eggs, and brown sugar. Add the cornstarch, salt, and spices. Fold in the whipped cream and the milk, then mix well. Pour the filling into the pre-baked crust and bake for about 35 minutes.
