I still have my baking equipment for a few more days, so I am taking the opportunity to bake a few cakes and relax. I bought some beautiful organic oranges to make fresh juice in the morning, and that inspired me to bake an orange cake as well.<\/p>\n

It is a simple recipe, but it makes a very soft cake with a light sweet orange flavor. I usually serve it with dark chocolate shavings, but since I did not have any this time, I replaced them with caramelized pecans.<\/p>\n

Ingredients<\/strong><\/span><\/p>\n

– 115 g flour<\/p>\n

– 105 g softened butter<\/p>\n

– 100 g granulated sugar<\/p>\n

– 2 eggs<\/p>\n

– 1 packet baking powder<\/p>\n

– 3 large oranges<\/p>\n

Method<\/strong><\/span><\/p>\n

Start by mixing the softened butter with the sugar and eggs. Once you have a creamy batter, add the flour and baking powder. Then add the zest of one orange \u2014 which is why organic oranges are best \u2014 and its juice.<\/p>\n

Grease and flour the cake pan of your choice. For this recipe, I use a loaf pan, for example. Pour the batter into the pan and bake in a preheated oven at 180 to 200\u00b0C \/ 350 to 390\u00b0F for 25 minutes.<\/p>\n

Meanwhile, prepare the orange syrup by heating the juice of the remaining two oranges with a little sugar for a few minutes.<\/p>\n

For the caramelized pecans, melt a little butter in a frying pan. Once melted, add the pecans. Stir well, and when the pecans are nicely coated in butter, sprinkle sugar over them. Let them caramelize for a few minutes. Once ready, place them separately on baking paper so they do not stick together.<\/p>\n

Take the cake out of the oven and let it cool slightly before unmolding it. Once unmolded, pour the orange syrup over the cake, then add the pecans on top \u2014 or dark chocolate shavings if you have some.<\/p>\n

The orange cake is now ready. All that is left is to enjoy it for snack time.<\/p>\n
