You can enjoy it hot or cold with a good salad \ud83d\ude42<\/p>\n<p style=\"text-align: center;\"><strong><em><span style=\"text-decoration: underline;\">Ingredients<\/span> <\/em><\/strong><\/p>\n<p style=\"text-align: center;\"><strong><em>For the filling<\/em><\/strong><\/p>\n<p style=\"text-align: center;\"><em>&#8211; homemade or store-bought shortcrust pastry<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 4 eggs<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 20 cl cr\u00e8me fra\u00eeche<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 2 eggplants<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 100 g smoked bacon lardons (vegetarians can make it without them)<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 1 onion<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 3 garlic cloves<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; olive oil<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; parsley<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>For the pastry<\/em><\/strong><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 200 g flour<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 100 g butter<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 1 egg<\/em><\/p>\n<p style=\"text-align: center;\"><em>&#8211; 1 pinch of salt<\/em><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><em><strong>Preparation<\/strong> <\/em><\/span><\/p>\n<p>Cut the eggplants into cubes of about 2 cm and saut\u00e9 them with the onion and bacon. Add a little olive oil because eggplant absorbs a lot. Cook for about 15 minutes.<\/p>\n<p>Mix the eggs with the cr\u00e8me fra\u00eeche, then season with salt and pepper. Pour this over the pastry. Then arrange the eggplant, onion, and bacon mixture on top. Prepare a persillade by mixing crushed garlic and chopped parsley, then spread it over the eggplants.<\/p>\n<p>For the shortcrust pastry: in a bowl, mix the flour, butter cut into small pieces, the beaten egg, and the salt. Roll out the dough in a tart pan and prick the bottom with a fork.<\/p>\n<p>Bake in a preheated oven at 180\u00b0C (350\u00b0F \/ gas mark 6) for 30 to 40 minutes depending on the power of your oven.<\/p>\n<p>Here is the eggplant tart I made for our lunch on the terrace today!
