And it is easy to see why: they make us dream with their rainbow colors! I gave them a try, and here is the result and of course the recipe.<\/p>\n<p style=\"text-align: center;\"><strong>For about a dozen rainbow cupcakes you will need:<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; 3 eggs<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; 170 g butter<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; 170 g sugar<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; 275 g flour<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; 1 vanilla bean (or vanilla extract)<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>For the frosting (I chose a mascarpone whipped cream)<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; Mascarpone<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; Full-fat liquid cream<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>&#8211; Icing sugar<\/strong><\/p>\n<p>\u00a0<\/p>\n<p style=\"text-align: center;\"><strong><span style=\"text-decoration: underline;\">Preparing the cakes<\/span><\/strong><\/p>\n<p>Start by mixing the softened butter and the sugar until you get a creamy mixture. Then add the eggs while continuing to mix. Next, gradually incorporate the flour to avoid lumps. Then divide the smooth batter equally into several bowls. Add a different food coloring to each bowl to obtain several colors. For the ones in the photos, I chose: blue, purple, pink, yellow, and green.<\/p>\n<p><script async=\"\" src=\"https:\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({\n          google_ad_client: \"null\",\n          enable_page_level_ads: true\n     });\n<\/script><br \/>\n<a href=\"https:\/\/floridaandbeyond.com\/wp-content\/uploads\/2015\/03\/6-e1427015062713.jpg\"><img fetchpriority=\"high\" decoding=\"async\" alt=\"6\" class=\"aligncenter wp-image-1160\" height=\"933\" src=\"https:\/\/floridaandbeyond.com\/wp-content\/uploads\/2015\/03\/6-e1427015062713-768x1024.jpg\" width=\"700\"\/><\/a><\/p>\n<p>Bake your rainbow cupcakes for about 15 minutes in a preheated oven at 200\u00b0C. Then take them out of the oven and let them cool!<\/p>\n<p style=\"text-align: center;\"><strong><span style=\"text-decoration: underline;\">Preparing the topping<\/span><\/strong><\/p>\n<p>I cannot give you the exact quantities because I make the whipped cream by eye and by taste. Put the mascarpone into a bowl (for this recipe, 200 to 250 g is enough) and loosen it.
